Place the ground turkey in a large mixing bowl. Add in the green onions, beaten egg, panko, chopped cilantro, coconut milk, grated ginger, salt, and Dijon mustard. Mix by hand until everything is well combined.
Form into serving sized patties.
Heat a non-stick skillet over medium high heat. Add in a little bit of oil, and swirl to coat the pan.
Place the turkey burger patties in the hot pan, and pan fry until browned on one side, then flip and continue cooking on the other side until browned, and the centers have been cooked through, safe internal temperatures are at 170 degrees F.
Serve immediately.
